"John and I met in 2015 in the Hudson Valley; a mutual friend introduced us because we were both professionally trained chefs. We had a lot in common and our love grew from there. Interestingly enough, we each had a very small tattoo of a pitchfork etched on our arms, which bonded us immediately. We spent time eating around and talking about our aspirations of starting our own business one day.
A couple years in we decided to live in North Carolina, and the plan was to open something there. While there, we did a lot of traveling for food to visit the greats of BBQ. Those journeys really shaped our thoughts about our food and what we envisioned for our business. As we continued planning, we felt the yearning to take our idea back home to the Hudson Valley.
We love the influence of the South, with scratch-made buttermilk biscuits and BBQ. Cooking over fire captivated us. The wood-burning style of cooking brought us back to our roots. After all, all cooking was originally done over burning wood. We decided to bring the South to the North and buy a food truck. A year later we took the coastal drive back to the Valley with our food truck in tow and opened Pitchfork Barbecue & Biscuits on Flag Day, June 14.
The menus are designed by us and carefully prepared; everything is made from scratch daily. We understand the foods we use and where they come from. We love the Hudson Valley and where we are from. John grew up Pine Island, and now we get to make our own food here for the community. The seasonality of the Hudson Valley enables us to adapt our menus and allow our customers to enjoy the local fare."
