As the Lakeside Farmers Market prepares to open next month a few new vendors will help to expand its already growing number of farm fresh exhibitors and prepared foods on Saturdays, from 9 a.m. to 1 p.m., on Winstanley Park at 133 Windermere Ave. in Greenwood Lake, beginning May 31.

Kesso Greek Foods

Among the new vendors are Kesso Greek Foods, purveyors of Greek strained yogurt, spanakopita, tiropita and baklava.

Greek yogurt has been slowly strained in order to remove excess whey, the watery liquid separated from milk during cheesemaking that contains lactose, proteins, minerals and vitamins. This results in a thicker, creamier and tangy consistency. This straining process increases the protein content while reducing the carbohydrate content compared to regular yogurt.

Owner Alex Kesso takes the strained yogurt and adds it to a wide variety of homemade recipes that include fresh fruit toppings, cheesecakes and other delectable dairy delights.

LunchLadyFoods.com

Another new vendor is West-Milford, N.J.-based Amy Goff, chef proprietor of LunchLadyFoods.com.

Customers can choose from a variety of satisfying soups, scrumptious salads, enticing entrées and luscious sweets and baked goods.

Goff offers a large variety of vegetarian or vegan meals, made with the freshest, most nutritious ingredients. Her produce is locally sourced and predominantly organic.

All menu items are freshly made when you order them, and substitutions and customizations are always welcome.
