How sweet it is

The cold weather and a busy schedule may have caused Warwick resident Pat Gallagher, owner of Gallagher Solar Thermal, to cancel the annual party in his back yard with live music and refreshments to celebrate the annual tapping of his maple trees. However, on Sunday, March 23, at the urging of several friends who wanted to learn how maple syrup was made, he decided to continue the tradition. Gallagher explained that although tapping maple trees is not difficult, it takes about 40 gallons of sap, which has to be boiled down and filtered, to produce one gallon of syrup.
