Greenwood Lake. Good, healthy soup

Earlier this month, Sue Nichols, MS, RD, CDE, CDN, from the Orange County Office for the Aging led the seniors at the Greenwood Lake Senior Center in a hands-on soup activity. Participants assembled and layered the dry ingredients of a healthy organic minestrone soup recipe into mason jars to bring home to prepare as a meal. Nichols also discussed how to make healthy soup substitutions and explained the importance of vitamin D to overall health.
