The consciousfork vegan kitchen, juice bar and market just tripled in size.

On Tuesday, April 22, members of the Warwick Valley Chamber of Commerce Board of Directors joined owner Kim Gabelmann and members of her family and staff for a grand opening celebration of the restaurant's new location at 14 Railroad Ave.

"For over the past year, we've been operating in our 'test lab'," said Gabelmann, referring to the restaurant's old location at 20 McEwen Street. "It gave us the unique opportunity to refine our menu offerings, develop our staff and operations, and most importantly build our presence in the community."

Although it had a few seats inside and additional eating in an outdoor garden, the original location was mostly take-out. The new facility on Railroad Ave. offers more seating as well as take-out, expanded menu offerings, and later hours.

According to Gabelmann, consciousfork's tagline, "nourishing the mind, body and soil," symbolizes a commitment to serving healthy, vegan dishes that are clean and kind to your body and the environment.

Using many local ingredients, the menu includes fresh pressed juices, smoothies, soups, desserts and "vegan comfort food." Whole Bowl, the signature dish, allows guests to build their own meal from a selection of various grains, vegetables, proteins, and dressings.

"Vegetables are the star at consciousfork," said Gabelmann, "We prepare eight to 10 seasonal varieties daily with inspiration coming from the many local farms we support."

She added that everything at consciousfork is made from scratch in an open kitchen, with ingredients available for sale in their market, including a wide variety of bulk grains, nuts, seeds, legumes, spices, teas, and organic produce.

In addition to offering only plant-based foods, the restaurant also serves food and drinks in containers made from plants, which are compostable.

Gabelmann explained that the name, consciousfork, stands for the forks in the road, referring to small or big decisions made daily that can impact health, the environment and local commerce.

The new restaurant has a modern welcoming vibe with rustic tones, featuring "live edge" tree slabs from local fallen trees used as counters and shelving made by local artisan, New York Heartwoods.

"I am truly blessed," said Gabelmann, "to have such a wonderful staff who contribute their own talents and passion each day, adding to the overall welcoming experience we strive to deliver to our guests."
